Ingredients

  • 1 box jumbo pasta shells (about 20–25 shells)
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning mix
  • 1 cup salsa
  • 1 cup refried beans (optional)
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • 1 cup shredded mozzarella cheese
  • ½ cup sour cream (for serving)
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro, chopped (optional garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook jumbo pasta shells according to package directions until al dente. Drain and set aside.
  3. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  4. Stir in taco seasoning and salsa. Cook for 2–3 minutes until combined. Remove from heat.
  5. Fill each cooked pasta shell with about 1 tablespoon of beef mixture and place them in the prepared baking dish.
  6. If using, spread refried beans on the bottom of the dish before placing shells.
  7. Sprinkle shredded cheeses evenly over the stuffed shells.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes, until cheese is melted and bubbly.
  9. Remove from oven, let cool slightly, then garnish with sour cream, green onions, and cilantro.
