Ingredients
- 1 box jumbo pasta shells (about 20–25 shells)
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning mix
- 1 cup salsa
- 1 cup refried beans (optional)
- 1 ½ cups shredded cheddar cheese (or Mexican blend)
- 1 cup shredded mozzarella cheese
- ½ cup sour cream (for serving)
- 2 green onions, sliced (for garnish)
- Fresh cilantro, chopped (optional garnish)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Cook jumbo pasta shells according to package directions until al dente. Drain and set aside.
- In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Stir in taco seasoning and salsa. Cook for 2–3 minutes until combined. Remove from heat.
- Fill each cooked pasta shell with about 1 tablespoon of beef mixture and place them in the prepared baking dish.
- If using, spread refried beans on the bottom of the dish before placing shells.
- Sprinkle shredded cheeses evenly over the stuffed shells.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes, until cheese is melted and bubbly.
- Remove from oven, let cool slightly, then garnish with sour cream, green onions, and cilantro.
- Serve warm with extra salsa or guacamole on the side. 🌮✨
