INGREDIENTS:
- 4 large baking potatoes
- 1 lb (450g) ground beef or turkey
- 1 packet taco seasoning (or homemade seasoning)
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup sliced black olives (optional)
- Salt and pepper to taste
- Olive oil
INSTRUCTIONS:
- Preheat oven to 400°F (200°C).
- Prepare the potatoes: Wash and scrub potatoes, then prick them with a fork. Rub with a little olive oil and sprinkle with salt. Bake directly on the oven rack for 45–60 minutes, or until tender.
- Cook the meat: While potatoes bake, brown the ground beef in a skillet over medium heat. Drain excess fat. Add taco seasoning and a splash of water, simmer 3–5 minutes until well-coated.
- Assemble potatoes: Once baked, slice potatoes in half lengthwise and scoop out a small portion of the center to create a “well.”
- Stuff the potatoes: Fill each potato with seasoned meat, then top with cheddar cheese. Return to the oven for 5–10 minutes until cheese melts.
- Add toppings: Remove from oven and top with sour cream, diced tomatoes, green onions, and olives (if using). Serve hot.
TIPS:
- For extra flavor, mix some shredded cheese into the potato before adding the meat.
- Use sweet potatoes for a slightly different twist.
- Make it vegetarian by using black beans or lentils instead of meat.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
