TACO SPAGHETTI


Ingredients

  • 8 oz (about 225g) spaghetti
  • 1 lb (450g) ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 cup salsa (mild or spicy, your choice)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1/2 cup sour cream (optional)
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • Chopped cilantro or green onions (for garnish)
  • Jalapeños or crushed tortilla chips (optional topping)

Instructions

  1. Cook the Spaghetti:
    Boil spaghetti in salted water according to package directions until al dente. Drain and set aside.
  2. Brown the Meat:
    In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Add Flavor:
    Stir in taco seasoning and 1 cup water. Cook for about 2 minutes until slightly thickened.
  4. Mix in Salsa and Cheese:
    Add salsa, cream cheese, and half of the cheddar cheese. Stir until melted and well combined.
  5. Combine with Spaghetti:
    Add cooked spaghetti to the skillet and mix everything together. If needed, add a splash of pasta water to loosen the sauce.
  6. Top and Melt:
    Sprinkle remaining cheddar cheese on top. Cover the skillet for 2–3 minutes until the cheese melts.
  7. Serve:
    Top with sour cream, jalapeños, chopped cilantro, green onions, or crushed tortilla chips if desired.
