Ingredients

  • 12 oz (340 g) spaghetti
  • 1 lb (450 g) ground beef
  • 1 packet taco seasoning mix
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 2 cups shredded cheddar cheese
  • 1 cup water
  • 1 cup milk
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional toppings: sliced green onions, chopped cilantro, sour cream, jalapeños

Instructions

  1. Cook the spaghetti according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
  3. Stir in the taco seasoning, diced tomatoes with green chilies, water, and milk. Bring to a simmer.
  4. Add the cooked spaghetti to the skillet and toss to coat evenly with the sauce.
  5. Sprinkle shredded cheddar cheese over the top. Cover and let cook for a few minutes until the cheese is melted and bubbly.
  6. Season with salt and pepper to taste.
  7. Garnish with green onions, cilantro, sour cream, or jalapeños if desired.
