Taco Potatoes recipe

Ingredients

  • 4 large russet potatoes, baked
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or homemade blend)
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup salsa
  • ¼ cup chopped green onions
  • ¼ cup diced tomatoes
  • ¼ cup sliced jalapeños (optional)
  • ¼ cup chopped fresh cilantro
  • 1 tbsp olive oil

Instructions

  1. Prepare the potatoes: Bake the potatoes at 400°F (200°C) for about 45-60 minutes until fork-tender.
  2. Cook the taco meat: In a skillet over medium heat, add olive oil and cook the ground beef until browned. Drain excess fat.
  3. Season the meat: Stir in taco seasoning and water. Simmer for 5 minutes until the sauce thickens.
  4. Assemble: Slice open the baked potatoes and fluff the inside with a fork. Top each potato with seasoned taco meat, cheese, sour cream, salsa, tomatoes, green onions, and jalapeños if using.
  5. Garnish: Sprinkle fresh cilantro on top and serve hot.
