- 4 large russet potatoes, baked
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning (or homemade blend)
- ½ cup water
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ cup salsa
- ¼ cup chopped green onions
- ¼ cup diced tomatoes
- ¼ cup sliced jalapeños (optional)
- ¼ cup chopped fresh cilantro
- 1 tbsp olive oil
Instructions
- Prepare the potatoes: Bake the potatoes at 400°F (200°C) for about 45-60 minutes until fork-tender.
- Cook the taco meat: In a skillet over medium heat, add olive oil and cook the ground beef until browned. Drain excess fat.
- Season the meat: Stir in taco seasoning and water. Simmer for 5 minutes until the sauce thickens.
- Assemble: Slice open the baked potatoes and fluff the inside with a fork. Top each potato with seasoned taco meat, cheese, sour cream, salsa, tomatoes, green onions, and jalapeños if using.
- Garnish: Sprinkle fresh cilantro on top and serve hot.
