Taco Potatoes

Ingredients

  • 4 large russet potatoes, diced
  • 1 tablespoon olive oil
  • 1 packet taco seasoning mix (or homemade taco seasoning)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/2 cup salsa (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dice the potatoes into bite-sized cubes.
  3. Toss the diced potatoes with olive oil, taco seasoning, salt, and pepper until well-coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the oven for 25-30 minutes, or until the potatoes are crispy and golden, flipping halfway through cooking.
  6. Once the potatoes are done, remove them from the oven and sprinkle with shredded cheddar cheese. Return to the oven for another 3-5 minutes to melt the cheese.
  7. Serve the taco potatoes topped with sour cream, chopped green onions, cilantro, and salsa if desired.
