- 4 large russet potatoes, diced
- 1 tablespoon olive oil
- 1 packet taco seasoning mix (or homemade taco seasoning)
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/2 cup salsa (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dice the potatoes into bite-sized cubes.
- Toss the diced potatoes with olive oil, taco seasoning, salt, and pepper until well-coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes, or until the potatoes are crispy and golden, flipping halfway through cooking.
- Once the potatoes are done, remove them from the oven and sprinkle with shredded cheddar cheese. Return to the oven for another 3-5 minutes to melt the cheese.
- Serve the taco potatoes topped with sour cream, chopped green onions, cilantro, and salsa if desired.
