Ingredients
- 1 lb bacon, chopped
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon red pepper flakes (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground black pepper
- 1/2 cup brewed coffee (optional for depth of flavor)
- 1/2 cup water (adjust as needed)
Instructions
- Cook the Bacon:
- In a large skillet, cook the chopped bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon from the skillet and set aside on a paper towel to drain excess fat. Keep about 2 tablespoons of bacon drippings in the skillet.
- Sauté the Onions and Garlic:
- Add the finely chopped onion to the skillet and cook over medium heat until softened, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Combine Ingredients:
- Add the cooked bacon back into the skillet.
- Stir in the brown sugar, maple syrup, apple cider vinegar, Dijon mustard, red pepper flakes, smoked paprika, and black pepper.
- If you’re using coffee, pour it in now. Add a little water to help deglaze the pan, scraping up any bacon bits stuck to the bottom.
- Simmer the Jam:
- Reduce the heat to low and let the mixture simmer for 30-40 minutes, stirring occasionally. The mixture should thicken and become jam-like in consistency. If it becomes too thick, add a splash of water to thin it out.
- Cool and Serve:
- Remove from heat and allow the bacon jam to cool slightly before transferring it to a jar or airtight container. Let it cool completely before refrigerating.
