Sweet & Spicy Bacon Jam

Ingredients

  • 1 lb bacon, chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • 1/2 cup brewed coffee (optional for depth of flavor)
  • 1/2 cup water (adjust as needed)

Instructions

  1. Cook the Bacon:
    • In a large skillet, cook the chopped bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon from the skillet and set aside on a paper towel to drain excess fat. Keep about 2 tablespoons of bacon drippings in the skillet.
  2. Sauté the Onions and Garlic:
    • Add the finely chopped onion to the skillet and cook over medium heat until softened, about 5 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  3. Combine Ingredients:
    • Add the cooked bacon back into the skillet.
    • Stir in the brown sugar, maple syrup, apple cider vinegar, Dijon mustard, red pepper flakes, smoked paprika, and black pepper.
    • If you’re using coffee, pour it in now. Add a little water to help deglaze the pan, scraping up any bacon bits stuck to the bottom.
  4. Simmer the Jam:
    • Reduce the heat to low and let the mixture simmer for 30-40 minutes, stirring occasionally. The mixture should thicken and become jam-like in consistency. If it becomes too thick, add a splash of water to thin it out.
  5. Cool and Serve:
    • Remove from heat and allow the bacon jam to cool slightly before transferring it to a jar or airtight container. Let it cool completely before refrigerating.
  6. Enjoy!
    • Serve your Sweet & Spicy Bacon Jam on toast, burgers, crackers, or as a savory-sweet topping for breakfast dishes. Enjoy!
