Ingredients
- 1 ½ lbs boneless, skinless chicken breasts or thighs, diced
- ¾ cup brown sugar
- ½ cup low-sodium soy sauce
- ¼ cup honey (optional for extra sweetness)
- 1 tbsp minced garlic
- 1 tsp ground ginger
- ½ tsp crushed red pepper flakes (optional for a kick)
- 2 tbsp cornstarch + 2 tbsp water (for thickening)
- Sliced green onions and sesame seeds for garnish (optional)
- Cooked rice, for serving
Instructions
- Prep the Chicken: Place the diced chicken in the slow cooker.
- Mix the Sauce: In a small bowl, combine brown sugar, soy sauce, garlic, ginger, honey (if using), and red pepper flakes. Stir well.
- Pour & Cook: Pour the sauce mixture over the chicken. Stir to coat evenly.
- Slow Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through and tender.
- Thicken the Sauce (Optional): In the last 30 minutes of cooking, stir together cornstarch and water. Add to the slow cooker and stir. Let it cook uncovered until the sauce thickens.
- Serve: Spoon the chicken over rice, garnish with green onions and sesame seeds, and enjoy your homemade take-out!
