Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, diced
  • ¾ cup brown sugar
  • ½ cup low-sodium soy sauce
  • ¼ cup honey (optional for extra sweetness)
  • 1 tbsp minced garlic
  • 1 tsp ground ginger
  • ½ tsp crushed red pepper flakes (optional for a kick)
  • 2 tbsp cornstarch + 2 tbsp water (for thickening)
  • Sliced green onions and sesame seeds for garnish (optional)
  • Cooked rice, for serving

Instructions

  1. Prep the Chicken: Place the diced chicken in the slow cooker.
  2. Mix the Sauce: In a small bowl, combine brown sugar, soy sauce, garlic, ginger, honey (if using), and red pepper flakes. Stir well.
  3. Pour & Cook: Pour the sauce mixture over the chicken. Stir to coat evenly.
  4. Slow Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through and tender.
  5. Thicken the Sauce (Optional): In the last 30 minutes of cooking, stir together cornstarch and water. Add to the slow cooker and stir. Let it cook uncovered until the sauce thickens.
