Sweet Potato & Spinach Bake

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese (or vegan cheese if preferred)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/2 cup heavy cream or coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs (e.g., thyme or rosemary) for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Sweet Potatoes: In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-12 minutes or until tender. Drain and set aside.
  3. Sauté Spinach: Heat olive oil in a large skillet over medium heat. Add the chopped spinach and cook for 2-3 minutes, just until wilted. Season with a pinch of salt, pepper, garlic powder, and onion powder.
  4. Assemble the Bake: In a large mixing bowl, combine the cooked sweet potatoes, sautéed spinach, heavy cream (or coconut milk), and half of the mozzarella cheese. Stir gently to mix everything together.
  5. Layer and Bake: Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining mozzarella cheese and grated Parmesan cheese (if using).
  6. Bake: Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly and the top is slightly golden.
  7. Garnish and Serve: Remove from the oven and garnish with fresh herbs. Serve hot and enjoy!
