Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Sweet Potatoes: In a large pot, bring salted water to a boil. Add the cubed sweet potatoes and cook for about 10-12 minutes or until tender. Drain and set aside.
- Sauté Spinach: Heat olive oil in a large skillet over medium heat. Add the chopped spinach and cook for 2-3 minutes, just until wilted. Season with a pinch of salt, pepper, garlic powder, and onion powder.
- Assemble the Bake: In a large mixing bowl, combine the cooked sweet potatoes, sautéed spinach, heavy cream (or coconut milk), and half of the mozzarella cheese. Stir gently to mix everything together.
- Layer and Bake: Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining mozzarella cheese and grated Parmesan cheese (if using).
- Bake: Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly and the top is slightly golden.
- Garnish and Serve: Remove from the oven and garnish with fresh herbs. Serve hot and enjoy!
