Sweet Potato Rocambole recipe

Ingredients

  • 2 medium sweet potatoes, cooked and mashed
  • 4 large eggs
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Powdered sugar (for rolling)

For the Filling:

  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup whipped cream

Instructions

  1. Preheat & Prepare: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Batter: In a bowl, beat eggs and sugar until fluffy. Add vanilla and mashed sweet potatoes, mixing until smooth.
  3. Combine Dry Ingredients: In another bowl, whisk flour, baking powder, cinnamon, and salt. Gradually fold into the wet ingredients.
  4. Bake: Pour batter onto the prepared baking sheet, spreading evenly. Bake for 12-15 minutes until set.
  5. Roll the Cake: While warm, transfer the cake onto a kitchen towel dusted with powdered sugar. Roll it up and let it cool completely.
  6. Prepare the Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream.
  7. Assemble: Unroll the cake, spread the filling, and re-roll it. Chill for at least 1 hour before slicing.
  8. Serve: Dust with powdered sugar and enjoy!
