- 2 medium sweet potatoes, cooked and mashed
- 4 large eggs
- ½ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup all-purpose flour

- 1 cup cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup whipped cream
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the Batter: In a bowl, beat eggs and sugar until fluffy. Add vanilla and mashed sweet potatoes, mixing until smooth.
- Combine Dry Ingredients: In another bowl, whisk flour, baking powder, cinnamon, and salt. Gradually fold into the wet ingredients.
- Bake: Pour batter onto the prepared baking sheet, spreading evenly. Bake for 12-15 minutes until set.
- Roll the Cake: While warm, transfer the cake onto a kitchen towel dusted with powdered sugar. Roll it up and let it cool completely.
- Prepare the Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream.
- Assemble: Unroll the cake, spread the filling, and re-roll it. Chill for at least 1 hour before slicing.
- Serve: Dust with powdered sugar and enjoy!
