Sweet Potato & Rocambole Recipe

This recipe combines the sweetness of roasted sweet potatoes with the savory flavors of a classic rocambole. It’s a visually appealing and delicious dish that’s perfect for a special occasion or a weeknight meal.

Ingredients:

  • For the Sweet Potato Layer:
    • 2 large sweet potatoes, peeled and cut into 1-inch cubes
    • 2 tablespoons olive oil
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon smoked paprika (optional)
  • For the Filling:
    • 1 pound ground beef or ground turkey
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 (14.5 ounce) can diced tomatoes, undrained
    • 1 (15 ounce) can black beans, rinsed and drained
    • 1 (10 ounce) package frozen corn, thawed
    • 1 teaspoon chili powder
    • 1/2 teaspoon cumin
    • 1/4 teaspoon oregano
    • Salt and pepper to taste
    • 1 cup shredded cheddar cheese
    • Chopped fresh cilantro, for garnish

Instructions:

  1. Roast the Sweet Potatoes: Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, salt, pepper, and smoked paprika (if using) on a baking sheet. Roast for 20-25 minutes, or until tender. Let cool slightly.  
  2. Make the Filling: In a large skillet, brown the ground meat over medium heat. Drain off excess grease. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Combine Ingredients: Stir in diced tomatoes, black beans, corn, chili powder, cumin, and oregano. Season with salt and pepper to taste. Bring to a simmer, then reduce heat and cook for 10 minutes, or until flavors meld.
  4. Assemble the Rocambole:
    • Spread the roasted sweet potatoes in an even layer on a large piece of parchment paper.
    • Top with the meat and bean mixture.
    • Sprinkle with shredded cheddar cheese.
  5. Roll and Bake: Carefully roll up the parchment paper, using it to help you form a tight log. Place the log seam-side down on a baking sheet.
  6. Bake: Bake in the preheated oven for 15-20 minutes, or until heated through and the cheese is melted and bubbly.
  7. Serve: Let the rocambole cool slightly before slicing and serving. Garnish with chopped cilantro.

Tips:

  • For a vegetarian option, substitute the ground meat with ground lentils or chickpeas.
  • Add other vegetables to the filling, such as chopped bell peppers, spinach, or mushrooms.
  • Serve the rocambole with your favorite sides, such as rice, quinoa, or a salad.
