Sweet Potato Rocambole recipe!

Ingredients

  • 1 cup mashed sweet potatoes (cooked and cooled)
  • 3/4 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)

For the Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk eggs and sugar in a bowl until light and fluffy. Add mashed sweet potatoes and vanilla, mixing until smooth.
  3. Sift flour, baking powder, cinnamon, nutmeg, and salt into the mixture. Gently fold until combined.
  4. Spread batter evenly onto the prepared baking sheet. Bake for 12-15 minutes until firm but soft.
  5. Dust a clean kitchen towel with powdered sugar. Flip the warm cake onto the towel and carefully peel off the parchment paper.
  6. Roll the cake gently (with the towel) and let it cool completely.
  7. Prepare the filling by beating cream cheese, butter, powdered sugar, and vanilla until creamy.
  8. Unroll the cooled cake, spread the filling evenly, then roll it back up tightly without the towel.
  9. Chill for at least 1 hour before slicing.
  10. Dust with powdered sugar, slice, and enjoy!
