- 1 cup mashed sweet potatoes (cooked and cooled)
- 3/4 cup all-purpose flour
- 3 large eggs
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
For the Filling:
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk eggs and sugar in a bowl until light and fluffy. Add mashed sweet potatoes and vanilla, mixing until smooth.
- Sift flour, baking powder, cinnamon, nutmeg, and salt into the mixture. Gently fold until combined.
- Spread batter evenly onto the prepared baking sheet. Bake for 12-15 minutes until firm but soft.
- Dust a clean kitchen towel with powdered sugar. Flip the warm cake onto the towel and carefully peel off the parchment paper.
- Roll the cake gently (with the towel) and let it cool completely.
- Prepare the filling by beating cream cheese, butter, powdered sugar, and vanilla until creamy.
- Unroll the cooled cake, spread the filling evenly, then roll it back up tightly without the towel.
- Chill for at least 1 hour before slicing.
- Dust with powdered sugar, slice, and enjoy!
