Sweet Potato Pie

Ingredients

  • 1 pound sweet potatoes (about 2 medium), peeled and cubed
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup whole milk or evaporated milk
  • 2 large eggs
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger (optional)
  • 1 teaspoon vanilla extract
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot of water until tender, about 15-20 minutes. Drain and mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes and butter. Mix until well blended.
  4. Add both sugars, milk, eggs, cinnamon, nutmeg, ginger (if using), and vanilla extract. Beat until the mixture is smooth and creamy.
  5. Pour the filling into the unbaked pie crust.
  6. Bake for 50-60 minutes, or until a knife inserted in the center comes out clean.
  7. Let the pie cool completely before slicing. Serve plain or with whipped cream.
