Ingredients
- 1 pound sweet potatoes (about 2 medium), peeled and cubed
- ½ cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- ½ cup whole milk or evaporated milk
- 2 large eggs
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger (optional)
- 1 teaspoon vanilla extract
- 1 unbaked 9-inch pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the sweet potatoes in a large pot of water until tender, about 15-20 minutes. Drain and mash until smooth.
- In a large mixing bowl, combine the mashed sweet potatoes and butter. Mix until well blended.
- Add both sugars, milk, eggs, cinnamon, nutmeg, ginger (if using), and vanilla extract. Beat until the mixture is smooth and creamy.
- Pour the filling into the unbaked pie crust.
- Bake for 50-60 minutes, or until a knife inserted in the center comes out clean.
- Let the pie cool completely before slicing. Serve plain or with whipped cream.
