Sweet Potato Honey Bun Cake with Pecans

Ingredients

  • 1 box yellow cake mix
  • 1 cup cooked, mashed sweet potatoes (about 1 medium sweet potato)
  • 4 large eggs
  • ¾ cup vegetable oil
  • 1 cup sour cream
  • ¾ cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 cup chopped pecans
  • ½ cup honey (plus extra for drizzling, optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a 9×13 inch baking dish.
  2. In a large bowl, combine cake mix, mashed sweet potatoes, eggs, oil, sour cream, honey, and vanilla. Beat until smooth and well combined.
  3. In a small bowl, mix together the brown sugar, cinnamon, and chopped pecans.
  4. Pour half of the cake batter into the prepared baking dish. Sprinkle half of the sugar-cinnamon-pecan mixture over the batter. Gently swirl with a knife.
  5. Pour the remaining batter on top and sprinkle with the remaining sugar-cinnamon-pecan mixture. Swirl again if desired.
  6. Bake for 40–50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool slightly. Drizzle with extra honey if desired before serving.
