- 1 box yellow cake mix
- 1 cup cooked, mashed sweet potatoes (about 1 medium sweet potato)
- 4 large eggs
- ¾ cup vegetable oil
- 1 cup sour cream
- ¾ cup packed light brown sugar
- 2 teaspoons ground cinnamon
- 1 cup chopped pecans
- ½ cup honey (plus extra for drizzling, optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325°F (165°C). Grease and flour a 9×13 inch baking dish.
- In a large bowl, combine cake mix, mashed sweet potatoes, eggs, oil, sour cream, honey, and vanilla. Beat until smooth and well combined.
- In a small bowl, mix together the brown sugar, cinnamon, and chopped pecans.
- Pour half of the cake batter into the prepared baking dish. Sprinkle half of the sugar-cinnamon-pecan mixture over the batter. Gently swirl with a knife.
- Pour the remaining batter on top and sprinkle with the remaining sugar-cinnamon-pecan mixture. Swirl again if desired.
- Bake for 40–50 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool slightly. Drizzle with extra honey if desired before serving.
