Sweet Potato Honey Bun Cake with Pecans

Ingredients

  • 1 box yellow cake mix
  • 1 cup cooked mashed sweet potatoes
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, combine cake mix, mashed sweet potatoes, eggs, oil, sour cream, honey, and vanilla extract. Mix until smooth.
  3. Pour half of the batter into the prepared pan.
  4. In a small bowl, mix together brown sugar, cinnamon, salt, and chopped pecans. Sprinkle half of this mixture over the batter in the pan.
