- 1 box yellow cake mix
- 1 cup cooked mashed sweet potatoes
- 4 large eggs
- 1/2 cup vegetable oil
- 1/2 cup sour cream
- 1/2 cup honey
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, combine cake mix, mashed sweet potatoes, eggs, oil, sour cream, honey, and vanilla extract. Mix until smooth.
- Pour half of the batter into the prepared pan.
- In a small bowl, mix together brown sugar, cinnamon, salt, and chopped pecans. Sprinkle half of this mixture over the batter in the pan.
- Pour the remaining batter on top and spread evenly. Sprinkle the remaining pecan mixture on top.
- Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool slightly before slicing. Serve warm or at room temperature.
