Sweet Potato Honey Bun Cake with Pecans

Ingredients

  • 1 box yellow cake mix
  • 1 cup cooked, mashed sweet potatoes
  • 4 large eggs
  • ¾ cup vegetable oil
  • ½ cup sour cream
  • ½ cup honey
  • 1 cup chopped pecans
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, combine cake mix, mashed sweet potatoes, eggs, vegetable oil, sour cream, honey, vanilla extract, and salt. Beat until smooth.
  3. In a small bowl, mix together brown sugar, cinnamon, and chopped pecans.
  4. Pour half of the batter into the prepared baking dish. Sprinkle half of the pecan mixture evenly over the batter. Pour the remaining batter on top, then sprinkle the remaining pecan mixture over it.
  5. Use a knife to swirl the pecan mixture slightly into the batter for a honey bun swirl effect.
  6. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool slightly before serving. Drizzle with extra honey if desired.
