With minimal ingredients and a straightforward method, it captures the essence of Swedish home baking—natural, delicious, and always made with love.
Ingredients
2 to 3 medium apples (preferably tart varieties like Granny Smith or Pink Lady)
2 tablespoons lemon juice
1 teaspoon ground cinnamon
1 teaspoon ground cardamom (optional)
1 cup granulated sugar
1/2 cup unsalted butter (softened)
2 large eggs
1 teaspoon pure vanilla extract
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup whole milk
Powdered sugar for dusting (optional)
Whipped cream or vanilla ice cream for serving (optional)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or springform pan
Peel and core the apples, then slice them thinly. Toss the slices in a bowl with lemon juice to prevent browning. Add cinnamon and cardamom to the apples and mix well to coat evenly. Set aside
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy using a hand mixer or stand mixer
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract
In a separate bowl, whisk together the flour, baking powder, and salt
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined. Do not overmix the batter
Pour the batter into the prepared cake pan and smooth the surface with a spatula
Arrange the apple slices on top of the batter in a circular pattern, slightly overlapping them for a beautiful presentation. Gently press the slices into the batter
Bake the cake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown
Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely
Once cooled, dust the top with powdered sugar for a decorative finish if desired
Serve warm or at room temperature with whipped cream or vanilla ice cream on the side for a truly comforting dessert experience
Swedish Apple Cake is best enjoyed fresh but can be stored in an airtight container at room temperature for up to two days or in the refrigerator for up to five days. The flavors deepen beautifully over time, making leftovers just as delightful. Whether served as a casual snack or a festive treat, this cake brings a taste of Scandinavian tradition right into your home.
