Swedish Apple Cake

Ingredients

  • 4 medium apples (peeled, cored, and sliced)
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cardamom (optional)
  • 1/2 cup granulated sugar (for apples)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar (for batter)
  • 1/2 cup unsalted butter (melted and cooled)
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round or square baking dish.
  2. Prepare the apples:
Toss the sliced apples with lemon juice, cinnamon, cardamom (if using), and 1/2 cup of sugar. Set aside.
  3. Make the batter:
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat eggs and 1/2 cup sugar until pale and thick. Add melted butter and vanilla extract, then mix well.
Gently fold in the dry ingredients until smooth.
  4. Assemble the cake:
Pour the batter into the greased baking dish. Arrange the apple slices on top in a single or slightly overlapping layer.
  5. Bake:
Bake for 40–45 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  6. Cool and serve:
Let it cool for at least 10 minutes. Dust with powdered sugar before serving, if desired.
