Swedish Apple Cake

Ingredients

  • 4 medium apples (peeled, cored, and sliced)
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, melted
  • ¼ cup milk
  • 2 tablespoons brown sugar (for sprinkling)
  • Powdered sugar (optional, for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. In a large bowl, combine the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the eggs, vanilla extract, melted butter, and milk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until well combined. The batter will be thick.
  5. Pour half of the batter into the prepared cake pan, spreading it evenly.
  6. Layer half of the apple slices on top of the batter.
  7. Add the remaining batter and top with the rest of the apple slices.
  8. Sprinkle the brown sugar evenly over the apples.
  9. Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  10. Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  11. Optionally, dust with powdered sugar before serving.
