Swedish Apple Cake


Ingredients

  • 3 medium apples (peeled, cored, and sliced thinly)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 1/4 cups (160g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 cup (60ml) milk
  • 1 tsp vanilla extract
  • 2 tbsp sliced almonds (optional)
  • 2 tbsp coarse sugar or pearl sugar for topping

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or springform pan.
  2. Prepare the Batter:
    In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. Combine Dry Ingredients:
    In a separate bowl, whisk together the flour, baking powder, and cinnamon. Add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  4. Add the Apples:
    Pour the batter into the prepared pan and smooth the top. Arrange the sliced apples in a circular pattern on top of the batter. Gently press them down a little.
  5. Finish & Bake:
    Sprinkle the sliced almonds (if using) and coarse sugar or pearl sugar over the apples. Bake for about 35–40 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden brown.
  6. Cool & Serve:
    Allow the cake to cool slightly in the pan, then remove and serve warm or at room temperature. Delicious with whipped cream or vanilla sauce!
