INGREDIENTS
- 1½ cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- ½ cup plain yogurt or sour cream
- ¼ cup milk
- Optional: powdered sugar for dusting or a simple glaze
INSTRUCTIONS
- Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar together until light and fluffy (about 2-3 minutes).
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Mix in the yogurt (or sour cream) until smooth.
- Gradually add dry ingredients, alternating with milk. Start and end with the dry ingredients. Mix until just combined — do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10–15 minutes before transferring to a wire rack.
- Optional: Dust with powdered sugar or drizzle with a simple vanilla glaze once cooled.
