Super Soft Vanilla Breakfast Cake

INGREDIENTS

  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup plain yogurt or sour cream
  • ¼ cup milk
  • Optional: powdered sugar for dusting or a simple glaze

INSTRUCTIONS

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Mix in the yogurt (or sour cream) until smooth.
  6. Gradually add dry ingredients, alternating with milk. Start and end with the dry ingredients. Mix until just combined — do not overmix.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10–15 minutes before transferring to a wire rack.
  10. Optional: Dust with powdered sugar or drizzle with a simple vanilla glaze once cooled.
