Super Soft Vanilla Breakfast Cake

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • ½ cup plain yogurt or sour cream
  • ½ cup milk

Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or square baking pan, or line it with parchment paper.
  2. Mix Dry Ingredients:
    In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream Butter & Sugar:
    In a separate large bowl, beat the softened butter and sugar until light and fluffy (about 2–3 minutes).
  4. Add Eggs & Vanilla:
    Add eggs one at a time, beating well after each. Stir in the vanilla extract.
  5. Add Yogurt & Milk:
    Mix in the yogurt (or sour cream), then gradually add the milk, stirring gently.
  6. Combine Wet & Dry:
    Add the dry ingredients to the wet ingredients in batches. Mix just until combined—do not overmix.
  7. Bake:
    Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool & Serve:
    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar or drizzle with glaze if desired.
