Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk (or milk + 1 tbsp vinegar)
- 2 large eggs
- ½ cup unsalted butter, melted and slightly cooled
- 2 teaspoons pure vanilla extract
- Optional: powdered sugar for dusting
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch (or similar size) baking pan.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
- Combine: Pour the wet ingredients into the dry ingredients. Gently fold until just combined — do not overmix; a few lumps are okay.
- Bake: Pour the batter into the prepared pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & Serve: Let the cake cool slightly in the pan, then transfer to a wire rack. Dust with powdered sugar if desired.
- Enjoy: Slice and enjoy warm for a soft, fluffy breakfast treat!
