Super Soft Vanilla Breakfast Cake

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • ½ cup milk (whole or 2%)
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven:
    Preheat your oven to 350°F (175°C). Grease an 8×8-inch (or similar) baking pan and line with parchment paper for easy removal.
  2. Cream butter and sugar:
    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Add eggs and vanilla:
    Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine dry ingredients:
    In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Mix wet and dry ingredients:
    Add the dry ingredients to the butter mixture in batches, alternating with the milk. Begin and end with the flour. Mix until just combined — don’t overmix.
  6. Bake:
    Pour the batter into the prepared baking pan and smooth the top. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and serve:
    Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired. Slice and enjoy!
