Ingredients
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tbsp vanilla extract
- ½ cup sour cream (or plain yogurt)
- ¼ cup milk

Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
- Whisk dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugar: In a large bowl, beat the butter and sugar together until light and fluffy.
- Add eggs and vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
- Combine wet and dry: Add half of the dry ingredients to the wet mixture. Stir in the sour cream and milk, then add the remaining dry ingredients. Mix until just combined—do not overmix.
- Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar or top with fruit if desired.
