Super Soft Vanilla Breakfast Cake

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • ½ cup sour cream (or plain yogurt)
  • ¼ cup milk

Optional Topping:

  • Powdered sugar for dusting
  • Fresh berries or fruit slices

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
  2. Whisk dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar: In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add eggs and vanilla: Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Combine wet and dry: Add half of the dry ingredients to the wet mixture. Stir in the sour cream and milk, then add the remaining dry ingredients. Mix until just combined—do not overmix.
  6. Bake: Pour the batter into the prepared pan and spread it evenly. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and serve: Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Dust with powdered sugar or top with fruit if desired.
