Super Soft Vanilla Breakfast Cake

INGREDIENTS

  • 1½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • ½ cup (120ml) sour cream or plain yogurt
  • ¼ cup (60ml) milk
  • Optional topping: powdered sugar or fresh fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 2-3 minutes).
  4. Add eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Stir in the sour cream (or yogurt) and milk until smooth.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
  7. Pour batter into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar or top with fruit if desired. Slice and enjoy!
