Ingredients

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • ½ cup plain yogurt or sour cream
  • ¼ cup milk (any kind)

  • Fresh berries or fruit preserves (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch square or round baking pan with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  4. Add eggs and vanilla: Beat in the eggs one at a time, then add vanilla extract and mix until smooth.
  5. Combine wet and dry: Add the yogurt (or sour cream) and milk, then gradually mix in the dry ingredients until just combined. Do not overmix.
  6. Pour and smooth: Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake: Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool and serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar before serving if desired.
