Ingredients:
- 1 whole chicken (about 3-4 lbs), cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 bell pepper, chopped
- 2 medium carrots, sliced
- 2 potatoes, peeled and diced
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 cups chicken broth or water
- Fresh parsley for garnish
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and brown them on all sides for about 8-10 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onions, garlic, bell pepper, and celery. Sauté for about 5 minutes until the vegetables soften and the onions become translucent.
