Succulent Stewed Chicken Recipe

Ingredients:

  • 1 whole chicken (about 3-4 lbs), cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 medium carrots, sliced
  • 2 potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups chicken broth or water
  • Fresh parsley for garnish

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and brown them on all sides for about 8-10 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onions, garlic, bell pepper, and celery. Sauté for about 5 minutes until the vegetables soften and the onions become translucent.
  3. Stir in the tomato paste and cook for another 2 minutes. Then add the diced tomatoes, paprika, thyme, oregano, and bay leaf. Mix well.
  4. Return the chicken to the pot, along with the carrots, potatoes, and chicken broth (or water). Bring to a simmer.
  5. Lower the heat, cover, and let it stew for 45 minutes to an hour, or until the chicken is fully cooked and the vegetables are tender.
