Stuffed Pepper Soup

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (32 oz) carton beef broth (or chicken broth)
  • 1 cup cooked rice (white or brown)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional for spice)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp olive oil

Instructions

  1. Brown the Meat – In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain any excess grease.
  2. Sauté the Veggies – Add diced onion and bell peppers to the pot. Cook for about 3-4 minutes until softened. Stir in minced garlic and cook for another minute.
  3. Add the Tomatoes & Broth – Pour in diced tomatoes, tomato sauce, and beef broth. Stir well.
  4. Season the Soup – Add Italian seasoning, paprika, salt, black pepper, red pepper flakes, and Worcestershire sauce. Stir to combine.
  5. Simmer – Bring the soup to a boil, then reduce the heat and let it simmer for 25-30 minutes.
  6. Add the Rice – Stir in cooked rice and let it warm through for about 5 minutes.
  7. Serve & Enjoy – Ladle into bowls and enjoy your comforting, flavorful Stuffed Pepper Soup!
