Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 1 (32 oz) carton beef broth (or chicken broth)
- 1 cup cooked rice (white or brown)
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional for spice)
- 1 tbsp Worcestershire sauce
- 1 tbsp olive oil
Instructions
- Brown the Meat – In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain any excess grease.
- Sauté the Veggies – Add diced onion and bell peppers to the pot. Cook for about 3-4 minutes until softened. Stir in minced garlic and cook for another minute.
- Add the Tomatoes & Broth – Pour in diced tomatoes, tomato sauce, and beef broth. Stir well.
- Season the Soup – Add Italian seasoning, paprika, salt, black pepper, red pepper flakes, and Worcestershire sauce. Stir to combine.
- Simmer – Bring the soup to a boil, then reduce the heat and let it simmer for 25-30 minutes.
- Add the Rice – Stir in cooked rice and let it warm through for about 5 minutes.
