Ingredients:

  • 20 jumbo pasta shells
  • 1 ½ cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped
  • 1 garlic clove, minced
  • 2 cups marinara sauce
  • Fresh basil or parsley, for garnish
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Cook the Pasta Shells: Bring a large pot of salted water to a boil. Cook the pasta shells according to package instructions, then drain and rinse with cold water to stop the cooking process. Set aside.
  3. Prepare the Filling: In a mixing bowl, combine the ricotta, mozzarella, Parmesan, egg, spinach, and garlic. Season with salt and pepper. Mix until well combined.
  4. Stuff the Shells: Spread a thin layer of marinara sauce on the bottom of a baking dish. Stuff each shell with a generous amount of the ricotta filling, then place them in the baking dish.
  5. Add the Sauce: Pour the remaining marinara sauce over the stuffed shells, making sure they are mostly covered.
  6. Bake: Cover the baking dish with foil and bake for 20 minutes. Then, uncover and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
  7. Serve: Garnish with fresh basil or parsley, and serve warm. Enjoy your delicious stuffed pasta shells!
