- 3 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese (divided)
- 1 egg
- ½ tsp garlic powder
- ½ tsp black pepper
- Salt to taste
- ½ cup cooked and crumbled bacon or sautéed vegetables (optional filling)
- ½ cup sour cream or cream cheese (optional, for creaminess)
- Fresh parsley or chives (for garnish)
- Butter or oil (for greasing)
Instructions
- Preheat Oven:
Preheat your oven to 375°F (190°C). Grease a muffin tin lightly with butter or oil. - Prepare the Potato Mixture:
In a large bowl, mix the mashed potatoes with ½ cup of shredded cheese, the egg, garlic powder, pepper, and salt. Stir until well combined. - Form the Nests:
Scoop the potato mixture into the muffin cups. Use the back of a spoon to press and shape the mixture into “nests,” leaving a hollow center for filling. - Add the Filling:
Fill the center of each nest with your choice of crumbled bacon, sautéed vegetables, or a dollop of sour cream/cream cheese. Sprinkle the remaining cheese over the tops. - Bake:
Bake for 20–25 minutes or until the edges are golden and the cheese is melted and bubbly. - Cool and Serve:
Let the nests cool for a few minutes, then carefully remove them from the muffin tin. Garnish with chopped parsley or chives and serve warm.
