Ingredients

  • 3 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese (divided)
  • 1 egg
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Salt to taste
  • ½ cup cooked and crumbled bacon or sautéed vegetables (optional filling)
  • ½ cup sour cream or cream cheese (optional, for creaminess)
  • Fresh parsley or chives (for garnish)
  • Butter or oil (for greasing)

Instructions

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C). Grease a muffin tin lightly with butter or oil.
  2. Prepare the Potato Mixture:
    In a large bowl, mix the mashed potatoes with ½ cup of shredded cheese, the egg, garlic powder, pepper, and salt. Stir until well combined.
  3. Form the Nests:
    Scoop the potato mixture into the muffin cups. Use the back of a spoon to press and shape the mixture into “nests,” leaving a hollow center for filling.
  4. Add the Filling:
    Fill the center of each nest with your choice of crumbled bacon, sautéed vegetables, or a dollop of sour cream/cream cheese. Sprinkle the remaining cheese over the tops.
  5. Bake:
    Bake for 20–25 minutes or until the edges are golden and the cheese is melted and bubbly.
  6. Cool and Serve:
