- 4 large potatoes (peeled, boiled, and mashed)
- 2 tbsp butter
- 1/4 cup milk (or cream)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup cooked chicken or minced beef (optional stuffing)
- 2 tbsp sweet corn (optional)
- 2 tbsp chopped spring onions or parsley
- 1 egg (lightly beaten, for binding)
- 1 tbsp breadcrumbs (for crispiness)
Instructions
- Preheat oven to 180°C (350°F) and grease a muffin tray.
- In a bowl, mix mashed potatoes with butter, milk, salt, pepper, garlic powder, egg, and breadcrumbs until creamy and smooth.
- Scoop potato mixture into muffin cups, pressing in the center to create a “nest” shape.
- Fill each nest with cheese, chicken/minced beef, corn, and spring onions.
- Sprinkle a little extra cheese on top.
- Bake for 15–20 minutes or until golden and crispy on edges.
- Serve hot, garnished with parsley or a dollop of sour cream.
