Ingredients
- 2 ½ cups all-purpose flour
- 2 ¼ teaspoons active dry yeast
- ¼ cup granulated sugar
- ½ teaspoon salt
- ½ cup warm milk (about 110°F/43°C)
- ¼ cup warm water
- 2 tablespoons unsalted butter, softened
- 1 large egg
- Oil for frying (vegetable or canola oil)
- Filling of choice: jam, Nutella, custard, or cream
- Extra sugar for coating
Instructions
- Activate Yeast: In a small bowl, mix warm water, a pinch of sugar, and yeast. Let it sit for 5–10 minutes until foamy.
- Make Dough: In a large bowl, combine flour, remaining sugar, and salt. Add yeast mixture, warm milk, butter, and egg. Mix until a dough forms.
- Knead: Transfer dough to a lightly floured surface and knead for 5–7 minutes until smooth and elastic.
- First Rise: Place dough in a greased bowl, cover, and let it rise in a warm place for about 1–2 hours, or until doubled in size.
- Shape: Punch down the dough. Roll it out to about ½ inch thick. Cut out circles using a doughnut cutter or glass.
- Second Rise: Place cut doughnuts on a parchment-lined tray. Cover and let rise for another 30–45 minutes.
- Fry: Heat oil in a deep pot to 350°F (175°C). Fry doughnuts in batches until golden brown on both sides, about 1–2 minutes per side. Remove and drain on paper towels.
- Coat & Fill: While warm, roll doughnuts in sugar. Once slightly cooled, use a piping bag with a nozzle to fill each doughnut with your chosen filling.
