Stuffed Cabbage Rolls Recipe

A classic comfort food, these stuffed cabbage rolls are filled with a savory mixture of ground meat, rice, and vegetables, then wrapped in tender cabbage leaves and simmered in a rich tomato sauce.

Ingredients:

  • For the filling:
    • 1 pound ground beef or pork
    • 1 cup cooked rice
    • 1/2 cup finely chopped onion
    • 1/4 cup finely chopped carrot
    • 1/4 cup finely chopped celery
    • 2 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon black pepper
    • Salt to taste
  • For the sauce:
    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 (28 ounce) can crushed tomatoes
    • 1 (15 ounce) can tomato sauce
    • 1 cup beef broth
    • 1 bay leaf
    • 1 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1/4 teaspoon black pepper
    • Salt to taste
  • Other:
    • 1 large head of green cabbage
    • Water for boiling cabbage leaves

Instructions:

  1. Prepare the cabbage leaves:
    • Bring a large pot of salted water to a boil.
    • Remove the core from the cabbage head.
    • Immerse each cabbage leaf in the boiling water for about 30 seconds, or until softened.
    • Drain the leaves and set aside.
  2. Make the filling:
    • In a large skillet, brown the ground meat over medium heat. Drain off any excess grease.
    • Add the onion, carrot, celery, and garlic to the skillet and cook until softened.
    • Stir in the cooked rice, thyme, oregano, pepper, and salt.
    • Remove from heat and let cool slightly.
  3. Assemble the cabbage rolls:
    • Place a spoonful of the filling in the center of each cabbage leaf.
    • Fold the sides of the leaf over the filling, then roll up tightly.
    • Place the rolled cabbage rolls in a large pot or Dutch oven.
  4. Prepare the sauce:
    • In a separate skillet, heat the olive oil over medium heat.
    • Add the chopped onion and garlic, and cook until softened.
    • Stir in the crushed tomatoes, tomato sauce, beef broth, bay leaf, thyme, oregano, pepper, and salt.
    • Bring the sauce to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Cook the cabbage rolls:
    • Pour the sauce over the cabbage rolls in the pot.
    • Cover the pot and simmer for 1-2 hours, or until the cabbage rolls are tender.
  6. Serve:
    • Remove the bay leaf before serving.
    • Serve the cabbage rolls hot, topped with the sauce.
