Ingredients:
- For the filling:
- 1 pound ground beef or pork
- 1 cup cooked rice
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped carrot
- 1/4 cup finely chopped celery
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- Salt to taste
- For the sauce:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 cup beef broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- Salt to taste
- Other:
- 1 large head of green cabbage
- Water for boiling cabbage leaves
Instructions:
- Prepare the cabbage leaves:
- Bring a large pot of salted water to a boil.
- Remove the core from the cabbage head.
- Immerse each cabbage leaf in the boiling water for about 30 seconds, or until softened.
- Drain the leaves and set aside.
- Make the filling:
- In a large skillet, brown the ground meat over medium heat. Drain off any excess grease.
- Add the onion, carrot, celery, and garlic to the skillet and cook until softened.
- Stir in the cooked rice, thyme, oregano, pepper, and salt.
- Remove from heat and let cool slightly.
- Assemble the cabbage rolls:
- Place a spoonful of the filling in the center of each cabbage leaf.
- Fold the sides of the leaf over the filling, then roll up tightly.
- Place the rolled cabbage rolls in a large pot or Dutch oven.
- Prepare the sauce:
