Stuffed Baked Potato with Meat Recipe

Ingredients:

  • For the Potatoes:
    • 4 large baking potatoes (Russet or Yukon Gold)
    • 2 tablespoons olive oil
    • 1 teaspoon salt
    • ½ teaspoon black pepper
  • For the Meat Filling:
    • 1 pound ground beef (or ground lamb/turkey)
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 cup cooked vegetables (peas, carrots, corn, or a mix) – Optional
    • ½ cup beef broth
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon dried thyme
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 2 tablespoons butter or olive oil

    • Sour cream or Greek yogurt
    • Chopped chives or green onions
    • Cooked bacon bits
    • Salsa

Instructions:

  1. Prepare the Potatoes: Preheat oven to 400°F (200°C). Wash the potatoes thoroughly and prick them several times with a fork. Rub the potatoes with olive oil, salt, and pepper.
  2. Bake the Potatoes: Place the potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 1 hour, or until a fork easily pierces the potato. Cooking time may vary depending on the size of your potatoes.
  3. Prepare the Meat Filling: While the potatoes are baking, prepare the meat filling. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess grease.
  4. Add Vegetables: Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes. If using, add the cooked vegetables and cook for another minute.
