Strawberry Shortcake Cheesecake Rolls

Ingredients

  • 1 can refrigerated crescent roll dough (or puff pastry)
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 2 tbsp strawberry jam (optional, for extra flavor)
  • 2 tbsp melted butter
  • 2 tbsp coarse sugar (optional, for sprinkling)
  • Powdered sugar, for dusting

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare Filling: In a bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  3. Add Strawberries: Gently fold in the diced strawberries. If using, swirl in the strawberry jam for extra flavor.
  4. Assemble Rolls: Unroll the crescent dough and separate it into rectangles. Pinch seams together if needed. Spread a layer of the cheesecake mixture onto each rectangle, then gently roll up from the short side.
  5. Bake: Place the rolls seam-side down on the prepared baking sheet. Brush the tops with melted butter and sprinkle with coarse sugar if desired.
  6. Bake Time: Bake for 12–15 minutes or until golden brown and cooked through.
  7. Serve: Let them cool slightly, then dust with powdered sugar. Serve warm and enjoy these sweet, creamy treats!
