Ingredients

For the Cake:

  • 1 ½ cups fresh strawberries, hulled and pureed
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk

For the Strawberry Frosting:

  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup fresh strawberries, pureed
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. Prepare the Strawberry Puree: Puree the fresh strawberries in a blender or food processor until smooth. Measure out 1 ½ cups for the cake batter and set aside.
  3. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. Cream the Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  5. Add the Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  6. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk and beginning and ending with the flour mixture. Mix until just combined. Fold in the strawberry puree until fully incorporated.
  7. Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
  8. Make the Frosting: In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, mixing until smooth. Add the strawberry puree, vanilla extract, and a pinch of salt, and beat until light and fluffy.
  9. Frost the Cake: Once the cake is completely cooled, spread the strawberry frosting evenly over the top. Decorate with fresh strawberries if desired.
  10. Serve and Enjoy: Slice into squares and serve. Enjoy your delicious strawberry sheet cake!
