Strawberry Pie Recipe

Ingredients:

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/4 cup ice water

For the filling:

  • 4 cups fresh strawberries, hulled and quartered
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch  
  • 1/4 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 2 large eggs, lightly beaten

Instructions:

Make the crust:

  1. Combine dry ingredients: In a medium bowl, whisk together the flour and salt.
  2. Cut in butter: Add the cold butter cubes to the flour mixture and cut in with a pastry blender or two knives until the mixture resembles coarse crumbs.
  3. Add water: Gradually sprinkle the ice water over the mixture, tossing with a fork until the dough just comes together.
  4. Form dough: Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Roll out dough: On a lightly floured surface, roll out one disk of dough to a 12-inch circle. Transfer to a 9-inch pie plate.  
  6. Roll out top crust: Roll out the remaining dough to a 12-inch circle. Cut slits in the top crust to allow steam to escape.
  7. Chill crust: Refrigerate the pie crust for at least 15 minutes.

Make the filling:

  1. Combine ingredients: In a large bowl, combine the strawberries, sugar, cornstarch, salt, and lemon juice. Toss to coat.
  2. Add eggs: Stir in the beaten eggs.
  3. Pour filling: Pour the filling into the prepared pie crust.
  4. Top with crust: Place the top crust over the filling and seal the edges. Crimp the edges to decorate.
  5. Cut vents: Cut a few slits in the top crust to allow steam to escape.  

Bake the pie:

  1. Preheat oven: Preheat your oven to 425°F (220°C).
  2. Bake: Place the pie on a baking sheet and bake for 15 minutes.
  3. Reduce heat and continue baking: Reduce the oven temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes, or until the filling is set and the crust is golden brown.  
  4. Cool: Let the pie cool completely before serving.

Serve:

  • Serve the pie chilled with whipped cream or ice cream.
