This light and airy strawberry mousse is a delightful dessert that’s perfect for any occasion. It’s made with fresh or frozen strawberries, whipped cream, and gelatin for a smooth and creamy texture.

Ingredients:

  • 1 pound fresh or frozen strawberries, thawed
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 envelope (1 tablespoon) unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy cream
  • For Topping:
    • 1 cup heavy cream
    • 2 tablespoons powdered sugar
    • Fresh strawberries for garnish

Instructions:

  1. Prepare the Strawberry Puree:
    • If using fresh strawberries, wash and hull them.
    • In a blender or food processor, puree the strawberries until smooth.
    • Strain the puree through a fine-mesh sieve to remove seeds.
    • In a saucepan, combine the strawberry puree, granulated sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is slightly thickened.
    • Remove from heat and set aside.
  2. Soften the Gelatin:
    • In a small bowl, sprinkle the gelatin over the cold water and let it soften for 5 minutes.
  3. Combine Gelatin and Strawberry Puree:
    • Add the softened gelatin to the warm strawberry puree and stir until completely dissolved.
    • Let the mixture cool to room temperature.
  4. Whip the Cream:
    • In a large bowl, whip the 1 cup of heavy cream until soft peaks form.
  5. Fold in Strawberry Mixture:
    • Gently fold the cooled strawberry mixture into the whipped cream until well combined.
  6. Chill the Mousse:
    • Divide the mousse among serving glasses or bowls.
    • Refrigerate for at least 2 hours, or until set.
  7. Prepare the Whipped Cream Topping:
    • In a separate bowl, whip the 1 cup of heavy cream with the powdered sugar until stiff peaks form.
  8. Garnish and Serve:
    • Top each serving of mousse with a dollop of whipped cream.
    • Garnish with a fresh strawberry.
    • Serve chilled.
