Strawberry Honeybun Cake Recipe

This delightful cake combines the sweet flavors of strawberries with the warmth of cinnamon, all baked into a moist and fluffy cake. It’s then topped with a strawberry glaze for an extra burst of flavor.  

Ingredients:

  • 1 box (15.25 oz) vanilla cake mix
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1 cup milk (or water, as specified on the cake mix box)
  • 1/2 cup vegetable oil (or melted butter, as specified on the cake mix box)  
  • 1 (16 ounce) package frozen strawberries, thawed and drained
  • For the Glaze:
    • 1 cup powdered sugar
    • 2-3 tablespoons strawberry juice (from the thawed strawberries)
    • Optional: A few drops of red food coloring for a deeper pink color

Instructions:

  1. Prepare the Cake Batter:
    • Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.  
    • In a large bowl, combine the vanilla cake mix, eggs, cinnamon, milk (or water), and vegetable oil (or butter). Beat with an electric mixer on low speed for 30 seconds, then on medium speed for 2 minutes, until well combined.
    • Gently fold in the thawed and drained strawberries.
  2. Bake the Cake:
    • Pour the batter into the prepared baking dish.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.  
  3. Prepare the Glaze:
    • While the cake is cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar and strawberry juice until smooth. Add more strawberry juice if needed to reach desired consistency.
    • If desired, add a few drops of red food coloring for a deeper pink color.
  4. Glaze the Cake:
    • Once the cake has cooled completely, drizzle the strawberry glaze over the top.
  5. Serve:
    • Slice and serve.

Tips and Notes:

  • Strawberry Juice: Make sure to drain the strawberries well to avoid a watery cake batter. Use the drained juice for the glaze.
  • Cake Mix Variations: You can use a yellow cake mix instead of vanilla for a different flavor.  
  • Cinnamon Amount: Adjust the amount of cinnamon to your preference.
  • Glaze Variations: You can add a splash of lemon juice or vanilla extract to the glaze for added flavor.
  • Make Ahead: This cake can be made ahead of time and stored in an airtight container at room temperature for up to 3 days.
