Ingredients
For the Cookies:
- 1 box (15.25 oz) strawberry cake mix
- 1 teaspoon baking powder
- 2 large eggs
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
For the Strawberry Crunch Topping:
- 15 Golden Oreos, crushed
- 1 (3 oz) box strawberry gelatin (Jell-O)
- 2 tablespoons unsalted butter, melted
Optional Drizzle:
- ½ cup white chocolate chips (melted)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the strawberry cake mix and baking powder. Add eggs, oil, and vanilla extract. Mix until a dough forms.
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 9–11 minutes, or until the edges are set and centers are soft. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
- While cookies cool, make the strawberry crunch topping:
- In a food processor or zip-top bag, crush Golden Oreos until coarse.
- Mix with strawberry gelatin and melted butter until combined.
- Sprinkle the strawberry crunch topping over cooled cookies. For extra fun, drizzle with melted white chocolate.
- Let chocolate set (if using), then enjoy!
