Strawberry Crunch Cookies

Ingredients

For the Cookies:

  • 1 box (15.25 oz) strawberry cake mix
  • 1 teaspoon baking powder
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract

For the Strawberry Crunch Topping:

  • 15 Golden Oreos, crushed
  • 1 (3 oz) box strawberry gelatin (Jell-O)
  • 2 tablespoons unsalted butter, melted

Optional Drizzle:

  • ½ cup white chocolate chips (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the strawberry cake mix and baking powder. Add eggs, oil, and vanilla extract. Mix until a dough forms.
  3. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Bake for 9–11 minutes, or until the edges are set and centers are soft. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  5. While cookies cool, make the strawberry crunch topping:
    • In a food processor or zip-top bag, crush Golden Oreos until coarse.
    • Mix with strawberry gelatin and melted butter until combined.
  6. Sprinkle the strawberry crunch topping over cooled cookies. For extra fun, drizzle with melted white chocolate.
  7. Let chocolate set (if using), then enjoy!
