Ingredients:
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup melted butter
For the filling:
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
For the topping:
- 2 cups fresh strawberries, sliced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions:
- Make the crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well until all ingredients are combined. Press the mixture into the bottom and sides of a 9-inch pie pan.
- Make the filling: In a large bowl, beat cream cheese with an electric mixer until smooth and creamy. Gradually add powdered sugar, beating until well combined. Beat in vanilla extract. Fold in whipped cream until just combined.
- Make the topping: In a small saucepan, combine sliced strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Reduce heat and simmer for 1 minute, stirring occasionally.
- Assemble the pie: Spread the cream cheese filling evenly over the prepared crust. Top with the cooled strawberry topping.
- Chill: Refrigerate the pie for at least 2 hours, or until set.
