Strawberry Cream Cheese Icebox Cake Recipe

Ingredients:

  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 2 cups fresh strawberries, sliced
  • 1 package (14 oz) graham crackers
  • Additional strawberries for garnish

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy.
  2. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
  3. Line the bottom of a 9×13 inch baking dish with a layer of graham crackers. Spread a layer of the cream cheese mixture over the crackers, followed by a layer of sliced strawberries.
  4. Repeat the layers, starting with another layer of graham crackers, followed by the cream cheese mixture and then strawberries. Continue layering until all ingredients are used, finishing with a layer of the cream cheese mixture on top.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the crackers to soften.
  6. Before serving, garnish with additional fresh strawberries on top. Slice and serve chilled.
