Strawberry Cheesecake Eggroll Bites

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 10 eggroll wrappers
  • 1/2 cup granulated sugar (for coating)
  • 1 tsp ground cinnamon (for coating)
  • Vegetable oil (for frying)

Instructions

  1. Prepare the Cheesecake Filling: In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or whisk to blend until smooth and creamy.
  2. Add Strawberries: Gently fold in the chopped strawberries into the cheesecake mixture.
  3. Prepare Eggroll Wrappers: Lay out the eggroll wrappers on a clean, flat surface. If necessary, cut them into halves or quarters depending on the size of your bites.
  4. Fill the Wrappers: Place a spoonful of the cheesecake mixture in the center of each eggroll wrapper. Be careful not to overfill. Fold in the sides and roll up tightly, sealing the edges with a small amount of water.
  5. Heat the Oil: In a deep frying pan or skillet, heat vegetable oil over medium-high heat for frying.
  6. Fry the Eggroll Bites: Once the oil is hot, carefully fry the eggrolls, turning them as they cook until golden and crispy (about 2-3 minutes). Remove them from the oil and place on a paper towel-lined plate to drain excess oil.
  7. Coat with Cinnamon Sugar: In a shallow bowl, mix together the granulated sugar and ground cinnamon. While the eggrolls are still warm, roll them in the cinnamon sugar mixture.
  8. Serve: Let the eggroll bites cool slightly before serving. Serve with a side of strawberry sauce or whipped cream for dipping.
