Strawberry Cake Recipe

A soft and moist strawberry cake bursting with fresh strawberry flavor, perfect for any occasion. This homemade treat is topped with luscious strawberry frosting for an irresistible finish.


Ingredients

For the Cake:

  • 2 ½ cups (310g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • ¾ cup (180ml) whole milk
  • 1 cup (240g) fresh strawberries, pureed

For the Strawberry Frosting:

  • 1 cup (225g) unsalted butter, softened
  • 4 cups (500g) powdered sugar
  • ¼ cup (60g) fresh strawberry puree
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

To Make the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients in three batches, alternating with the milk, beginning and ending with the dry ingredients.
  6. Gently fold in the strawberry puree until evenly combined.
  7. Divide the batter evenly between the prepared pans and smooth the tops with a spatula.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

To Make the Frosting:

  1. In a large bowl, beat the butter until creamy.
  2. Gradually add the powdered sugar, one cup at a time, beating until smooth.
  3. Mix in the strawberry puree, vanilla extract, and salt. Adjust the consistency with additional powdered sugar or a splash of milk if necessary.

Assembly:

  1. Place one cake layer on a serving plate and spread a generous amount of frosting on top.
  2. Place the second cake layer on top and frost the top and sides of the cake.
  3. Decorate with fresh strawberries if desired.
