Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In another large bowl, beat eggs, sugar, butter, vanilla, lemon extract, lemon juice, and oil until smooth.
- Mix in yogurt (or sour cream).
- Gradually fold in the dry ingredients until just combined—don’t overmix.
- Pour batter into the loaf pan and bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let cake cool completely before glazing.
- For the glaze, whisk powdered sugar with lemon juice until smooth. Drizzle over cooled loaf.
