Starbucks Lemon Loaf Cake


INGREDIENTS

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon extract
  • ⅓ cup fresh lemon juice
  • ½ cup plain Greek yogurt or sour cream
  • ½ cup vegetable oil
  • Zest of 1 large lemon

For the glaze:

  • 1 cup powdered sugar
  • 2–3 tablespoons fresh lemon juice

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the eggs, sugar, and softened butter until light and fluffy.
  4. Add vanilla extract, lemon extract, lemon juice, lemon zest, and Greek yogurt. Mix until well combined.
  5. Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Slowly pour in the vegetable oil and mix until smooth and fully incorporated.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  10. For the glaze, whisk powdered sugar and lemon juice together until smooth and pourable. Drizzle over the cooled loaf.
