INGREDIENTS
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 2 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 teaspoons lemon extract
- ⅓ cup fresh lemon juice
- ½ cup plain Greek yogurt or sour cream
- ½ cup vegetable oil
- Zest of 1 large lemon
For the glaze:
- 1 cup powdered sugar
- 2–3 tablespoons fresh lemon juice
INSTRUCTIONS
- Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the eggs, sugar, and softened butter until light and fluffy.
- Add vanilla extract, lemon extract, lemon juice, lemon zest, and Greek yogurt. Mix until well combined.
- Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
- Slowly pour in the vegetable oil and mix until smooth and fully incorporated.
- Pour the batter into the prepared loaf pan.
- Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk powdered sugar and lemon juice together until smooth and pourable. Drizzle over the cooled loaf.
