These Stacked Corny Stash Tacos are a fun, layered twist on classic tacos, filled with layers of seasoned beef, crisp lettuce, fresh salsa, and a blend of cheeses, all stacked between crispy corn tortillas for a delicious, hearty bite!
Ingredients
- Taco Layers:
- 12 small corn tortillas
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup canned corn, drained
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup chopped onions (optional)
- 1 cup shredded cheddar and Monterey Jack cheese blend
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 avocado, sliced (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cook the beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and stir in taco seasoning according to package instructions. Set aside.
- Toast the tortillas: Place the corn tortillas on the baking sheet and bake for 5-7 minutes or until they are lightly crispy. Remove from the oven.
- Layer the tacos:
- Place a tortilla on a plate.
- Spread a spoonful of seasoned beef over it.
