Stacked Corny Stash Tacos


These Stacked Corny Stash Tacos are a fun, layered twist on classic tacos, filled with layers of seasoned beef, crisp lettuce, fresh salsa, and a blend of cheeses, all stacked between crispy corn tortillas for a delicious, hearty bite!


Ingredients

  • Taco Layers:
  • 12 small corn tortillas
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup canned corn, drained
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup chopped onions (optional)
  • 1 cup shredded cheddar and Monterey Jack cheese blend
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cook the beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and stir in taco seasoning according to package instructions. Set aside.
  3. Toast the tortillas: Place the corn tortillas on the baking sheet and bake for 5-7 minutes or until they are lightly crispy. Remove from the oven.
  4. Layer the tacos:
  • Place a tortilla on a plate.
  • Spread a spoonful of seasoned beef over it.
  • Sprinkle a layer of corn, lettuce, and a mix of the shredded cheese.
  • Add a second tortilla on top and repeat the layering process until you reach 3 layers or your desired height.
