- 2 sheets puff pastry, thawed
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg, beaten (for egg wash)

Instructions:
- Preheat oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the filling:
- In a large skillet, heat the olive oil over medium heat.

- Apply egg wash: Brush the tops of the pastries with the beaten egg for a golden finish.
- Bake: Bake in the preheated oven for 15-20 minutes, or until the pastries are puffed and golden brown.
