Spinach Stuffed Pastry Recipe

Ingredients:

  • 1 package of puff pastry (2 sheets), thawed
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 small onion, finely chopped
  • 1 egg (for egg wash)
  • Salt and pepper, to taste
  • Olive oil, for sautéing
  • Optional: nutmeg, red pepper flakes for added flavor

Instructions:

Preheat your oven to 400°F (200°C). In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant. If using fresh spinach, add it to the skillet and cook until wilted, about 2-3 minutes. If using frozen spinach, ensure it’s thoroughly drained and add it directly to the mixture.

In a mixing bowl, combine the ricotta, feta, Parmesan cheese, and the cooked spinach mixture. Season with salt, pepper, and any optional spices like nutmeg or red pepper flakes. Mix until well combined.

Roll out one sheet of puff pastry on a lightly floured surface. Cut the pastry into squares (about 4×4 inches). Place a generous spoonful of the spinach filling in the center of each square. Fold the pastry over the filling to form triangles and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

Transfer the pastries to a lined baking sheet. In a small bowl, beat the egg and brush it over the tops of each pastry for a golden finish.
