Spinach & Feta Stuffed Pastries Recipe

Flaky, golden pastries filled with a savory mixture of spinach, feta cheese, and herbs. Perfect as an appetizer, snack, or light meal.

Ingredients:

  • For the Filling:
    • 1 lb (450g) fresh spinach, or 10 oz (280g) frozen spinach, thawed and squeezed dry
    • 4 oz (115g) feta cheese, crumbled
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1/4 cup fresh dill, chopped
    • 1/4 cup fresh parsley, chopped
    • 1 large egg, lightly beaten
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • Optional: a pinch of nutmeg.
  • For the Pastry:
    • 1 lb (450g) puff pastry, thawed (or phyllo dough if preferred)
    • 1 egg, beaten (for egg wash)
    • Optional: sesame seeds or everything bagel seasoning.

Instructions:

  1. Prepare the Filling:
    • If using fresh spinach, wash it thoroughly. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.  
    • Add the spinach to the skillet (if using fresh, cook until wilted). If using frozen spinach, add it to the skillet. Cook for a few minutes until any excess moisture evaporates.
    • Remove the skillet from the heat and let the spinach mixture cool slightly.
    • In a large bowl, combine the cooled spinach mixture, crumbled feta cheese, chopped dill, chopped parsley, and the beaten egg. Season with salt, pepper, and nutmeg (if using). Mix well.
  2. Assemble the Pastries:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • On a lightly floured surface, unfold the thawed puff pastry. If using phyllo dough, follow the instructions on the package.
    • If using puff pastry, you can cut the pastry into squares, rectangles, or triangles, depending on your preference.
    • Place a spoonful of the spinach filling in the center of each pastry piece.
    • Fold the pastry over the filling to create a triangle or seal the edges to create a pocket, pressing the edges firmly to seal. You can use a fork to crimp the edges.
  3. Bake the Pastries:
    • Place the assembled pastries on the prepared baking sheet.
    • Brush the pastries with the beaten egg wash.
    • Optional: sprinkle with sesame seeds or everything bagel seasoning.
    • Bake for 20-25 minutes, or until the pastries are golden brown and puffed.
    • Let the pastries cool slightly before serving.

Tips and Variations:

  • For a richer flavor, add a small amount of ricotta cheese to the filling.
  • If you prefer a spicier filling, add a pinch of red pepper flakes.
  • You can use different types of herbs, such as oregano or mint, in the filling.
  • If using phyllo dough, remember to keep the dough you are not using covered with a damp cloth to prevent it from drying out.
  • Serve warm or at room temperature.
