Flaky, golden pastries filled with a savory mixture of spinach, feta cheese, and herbs. Perfect as an appetizer, snack, or light meal.
Ingredients:
- For the Filling:
- 1 lb (450g) fresh spinach, or 10 oz (280g) frozen spinach, thawed and squeezed dry
- 4 oz (115g) feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1 large egg, lightly beaten
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: a pinch of nutmeg.
- For the Pastry:
- 1 lb (450g) puff pastry, thawed (or phyllo dough if preferred)
- 1 egg, beaten (for egg wash)
- Optional: sesame seeds or everything bagel seasoning.
Instructions:
- Prepare the Filling:
- If using fresh spinach, wash it thoroughly. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the spinach to the skillet (if using fresh, cook until wilted). If using frozen spinach, add it to the skillet. Cook for a few minutes until any excess moisture evaporates.
- Remove the skillet from the heat and let the spinach mixture cool slightly.
- In a large bowl, combine the cooled spinach mixture, crumbled feta cheese, chopped dill, chopped parsley, and the beaten egg. Season with salt, pepper, and nutmeg (if using). Mix well.
- Assemble the Pastries:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, unfold the thawed puff pastry. If using phyllo dough, follow the instructions on the package.
- If using puff pastry, you can cut the pastry into squares, rectangles, or triangles, depending on your preference.
- Place a spoonful of the spinach filling in the center of each pastry piece.
- Fold the pastry over the filling to create a triangle or seal the edges to create a pocket, pressing the edges firmly to seal. You can use a fork to crimp the edges.
- Bake the Pastries:
- Place the assembled pastries on the prepared baking sheet.
- Brush the pastries with the beaten egg wash.
- Optional: sprinkle with sesame seeds or everything bagel seasoning.
- Bake for 20-25 minutes, or until the pastries are golden brown and puffed.
- Let the pastries cool slightly before serving.
Tips and Variations:
- For a richer flavor, add a small amount of ricotta cheese to the filling.
- If you prefer a spicier filling, add a pinch of red pepper flakes.
- You can use different types of herbs, such as oregano or mint, in the filling.
- If using phyllo dough, remember to keep the dough you are not using covered with a damp cloth to prevent it from drying out.
- Serve warm or at room temperature.
Enjoy your delicious spinach stuffed pastries!
