Spinach & Feta Stuffed Meatloaf Recipe

A flavorful and moist meatloaf filled with a vibrant mixture of spinach, feta cheese, and herbs. Perfect for a family dinner or a comforting meal.

Ingredients:

  • For the Meatloaf:
    • 1.5 lbs ground beef (80/20 blend recommended)
    • 1/2 cup breadcrumbs (plain or Italian seasoned)
    • 1/4 cup milk (or beef broth)
    • 1 large egg, lightly beaten
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper  
    • 2 tablespoons Worcestershire sauce
    • 2 tablespoons ketchup (or tomato paste)
  • For the Filling:
    • 5 ounces fresh spinach, roughly chopped
    • 4 ounces feta cheese, crumbled
    • 2 tablespoons olive oil
    • 1 clove garlic minced.
    • 1/4 teaspoon red pepper flakes (optional)
    • salt and pepper to taste.
  • For the Glaze (Optional):
    • 1/4 cup ketchup
    • 1 tablespoon brown sugar
    • 1 teaspoon apple cider vinegar

Instructions:

  1. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
    • Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using).

    • If using the glaze, whisk together the ketchup, brown sugar, and apple cider vinegar in a small bowl.

    • Bake for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
    • Let the meatloaf rest for 10 minutes before slicing and serving.
