A flavorful and moist meatloaf filled with a vibrant mixture of spinach, feta cheese, and herbs. Perfect for a family dinner or a comforting meal.
Ingredients:
- For the Meatloaf:
- 1.5 lbs ground beef (80/20 blend recommended)
- 1/2 cup breadcrumbs (plain or Italian seasoned)
- 1/4 cup milk (or beef broth)
- 1 large egg, lightly beaten
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons Worcestershire sauce
- 2 tablespoons ketchup (or tomato paste)
- For the Filling:
- 5 ounces fresh spinach, roughly chopped
- 4 ounces feta cheese, crumbled
- 2 tablespoons olive oil
- 1 clove garlic minced.
- 1/4 teaspoon red pepper flakes (optional)
- salt and pepper to taste.
- For the Glaze (Optional):
- 1/4 cup ketchup
- 1 tablespoon brown sugar
- 1 teaspoon apple cider vinegar
Instructions:
- Prepare the Filling:
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using).
- Remove from heat and let it cool slightly. Once cooled, stir in the crumbled feta cheese.
- Prepare the Meatloaf Mixture:
- In a large bowl, combine the breadcrumbs and milk (or broth). Let it sit for a few minutes to soften the breadcrumbs.
- Add the ground beef, beaten egg, chopped onion, minced garlic, dried oregano, dried basil, salt, pepper, Worcestershire sauce, and ketchup (or tomato paste) to the bowl.
- Use your hands or a spoon to gently mix the ingredients until well combined. Avoid overmixing, as this can make the meatloaf tough.
- Assemble the Meatloaf:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Divide the meatloaf mixture in half.
- Press half of the meat mixture into the bottom of the prepared baking sheet or loaf pan, forming an even layer.
- Spread the spinach and feta filling evenly over the meat layer, leaving a small border around the edges.
- Place the remaining meat mixture on top of the filling and gently press it down to seal the edges.
- Bake the Meatloaf:
- If using the glaze, whisk together the ketchup, brown sugar, and apple cider vinegar in a small bowl.
- Brush the top of the meatloaf with the glaze, if desired.
- Bake for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing and serving.
- Serve:
- Slice the meatloaf and serve warm. Enjoy with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
Tips and Variations:
- For a spicier kick, add a pinch of cayenne pepper to the meatloaf mixture or filling.
- You can substitute the feta cheese with ricotta or goat cheese.
- Use ground turkey or chicken instead of beef.
- Add sautéed mushrooms to the spinach filling.
- For a smokier flavor, add a teaspoon of smoked paprika to the meat mixture.
- For a cheeseier meatloaf, sprinkle shredded mozzarella or cheddar cheese over the top during the last 15 minutes of baking.
- To make a gluten free version, substitute the breadcrumbs with gluten free breadcrumbs.
