Spinach Casserole Recipe

Ingredients

  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 (10-ounce) packages frozen chopped spinach, thawed and well-drained
  • 1 cup ricotta cheese (or cottage cheese)
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • ½ cup sour cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a medium baking dish with butter or cooking spray.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and sauté for another 30 seconds.
  3. Add the drained spinach to the skillet and cook for 2-3 minutes, stirring to combine and remove excess moisture. Remove from heat.
  4. In a large bowl, combine ricotta, cheddar, Parmesan, eggs, sour cream, salt, pepper, and nutmeg (if using). Stir until well mixed.
  5. Add the spinach mixture to the bowl and mix until fully combined.
  6. Transfer the mixture to the prepared baking dish and spread it evenly.
  7. Bake for 30-35 minutes, or until the casserole is set and lightly golden on top.
  8. Let it cool for a few minutes before serving. Enjoy!
