Ingredients
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 (10-ounce) packages frozen chopped spinach, thawed and well-drained
- 1 cup ricotta cheese (or cottage cheese)
- 1 cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 2 large eggs, beaten
- ½ cup sour cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon ground nutmeg (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a medium baking dish with butter or cooking spray.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the garlic and sauté for another 30 seconds.
- Add the drained spinach to the skillet and cook for 2-3 minutes, stirring to combine and remove excess moisture. Remove from heat.
- In a large bowl, combine ricotta, cheddar, Parmesan, eggs, sour cream, salt, pepper, and nutmeg (if using). Stir until well mixed.
- Add the spinach mixture to the bowl and mix until fully combined.
- Transfer the mixture to the prepared baking dish and spread it evenly.
- Bake for 30-35 minutes, or until the casserole is set and lightly golden on top.
- Let it cool for a few minutes before serving. Enjoy!
