Ingredients
- 6 large eggs
- ½ cup fresh spinach, chopped
- ¼ cup feta cheese, crumbled
- ¼ cup milk (optional, for creamier texture)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder (optional)
- ¼ teaspoon onion powder (optional)
- ¼ teaspoon red pepper flakes (optional, for spice)
- 1 tablespoon olive oil or butter (for greasing)
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil or butter to prevent sticking.
- Prepare the spinach by washing and chopping it into small pieces. If using frozen spinach, thaw and squeeze out excess water.
- Whisk the eggs in a large bowl until smooth. Add milk if you prefer a softer texture.
- Season the eggs by adding salt, black pepper, garlic powder, onion powder, and red pepper flakes. Mix well.
- Add the spinach and feta cheese to the egg mixture, stirring gently to distribute the ingredients evenly.
- Pour the mixture into the greased muffin tin, filling each cup about ¾ full to allow room for rising.
- Bake for 18-22 minutes or until the egg muffins are firm and slightly golden on top. A toothpick inserted in the center should come out clean.
- Cool slightly before removing the muffins from the tin. Use a butter knife to gently loosen the edges if needed.
- Serve warm or let them cool completely before storing in an airtight container in the refrigerator for up to 4 days.
- Reheat in the microwave for 20-30 seconds before serving. These muffins can also be frozen for up to 2 months.
